Easy Healthy Meals – Gnocchi

Gnocchi
Serves 6

Ingredients
1 kilogram of starchy potaotes, peeled, diced.
1/4 cup egg, lightly beaten.
1 cup of unbleached plain flour.
1 tablespoon of salt.

Method
Bring a large pot of salted water to the boil.
Add the potaotes to the water and cook until tender, 25-30 minutes.
Drain well, and mash while still hot until you have a smooth, lump free mash. Allow to cool.
Mound the potato mash onto a large chopping board, create a small well in the centre and pour the egg in.
Work the egg through all of the potato and add the flour 1/4 cup at a time.
When the mix becomes dough like and is no longer sticky, the gnocchi are ready to be made.
Cut the dough into 8 portions.
Roll each portion into a snake about the thickness of your thumb.
Lightly dust with flour, then cut into 2 cm long pieces.
Holding each one between your thumb and forefinger, wipe a fork down the gnocchi to leave the pattern of the tynes on the surface of the gnocchi.
As you finish each 1/8 of the dough, add them to rapidly boiling unsalted water.
Drop them in, and when they are ready they will float to the surface.
Scoop out, drain then add your favourite pasta sauce to serve.
