Strawberry and Coconut Panna Cotta

Ingredients
270ml can coconut cream.
1/2 cup warm water.
4 tablespoons sugar.
3 teaspoons gelatin.
1 teaspoon vanilla essence.
400 gram tub strawberry yoghurt.
300 grams strawberries.
Method
Combine water, sugar and gelatin in a heat proof jug and microwave on High for 30 seconds.
Remove and allow to cool for 5 minutes.
To a bowl add vanilla, coconut cream and yoghurt, and stir to combine.
Add the gelatin mixture to the bowl and whisk until smooth.
Pour into 8, 1/2 cup capacity moulds, and chill until set.
Serving
Serve with fresh strawberries.
